Loaded Baked Potato

 Baked potatoes are usually baked in the oven for about an hour, but this recipe uses the microwave and is much faster and comes out really well.  Place one potato in the microwave oven and hit “potato” cooking button. If pot potato button is not an option, cook on high for 5 minutes and check for doneness. If a wooden skewer doesn’t go in easily, cook for one more minute. When the potato is done, take it out and cool for a while. Cut in half and  cook it in the toaster oven until the top is slightly brown.

In the United States, “loaded” potatoes mean to put on a lot of condiments, butter, sour cream, cheese, chives and bacon. When you put everything on the potato, it’s fully loaded. It’s high in calories and you may feel like you are clogging your arteries, but it’s perfectly delicious.

Ingredients

  • 1 large Russet potato

  • 2 TBS Butter

  • 2 TBS Sour cream

  • 2 TBS Shredded cheese

  • 1 TBS Green onion or chives

  • 2 strips Cooked bacon (diced)

  • to taste - Salt Pepper

Directions

  • Wash the potato and poke about 10 holes with sharp knife.
  • Wrap loosely in a plastic (microwavable) wrap and cook it in the microwave until done. About five to six minutes on high.
  • Remove from the oven, cool it, unwrap and cut in half.
  • Place the potatoes on a oven safe plates put butter, salt and pepper and toast about 5 minutes until the top is slightly golden.
  • Add sour cream, cheese, chives (green onion) and bacon on top.
