About 10 years ago, my son’s girlfriend taught me this recipe. She was a half of Okinawan and American, and very pretty and clever. I wanted her to get married to my son someday, but that was just my dream.
She put almonds in dates and wrapped with bacon and baked them in the oven.
I’d never eaten dates, so I had no idea what it would taste like. It was good.
Dried dates are very sweet, but It goes well with salty bacon.
Since then, I changed that recipe and put goat cheese instead of almonds. They are also delicious.
Dates are healthy food. My son used to tell me to eat dates everyday, but I didn’t listen to him that time. Recently I read of the health benefits of eating dates and tried eating them and I must admit they work well for digestive health. I should have listened to my son, but you know it’s hard to listen to others especially your own kids.

Ingredients
6largedried dates (pitted)
3stripsBacon
4TBSgoat cheese (half package)
4Almonds

Directions
Open dates by cutting on one side (lengthwise) and put either goat cheese or almonds. Close the opening.
Cut bacon strips in half. Place one date on the end of bacon and wrap several times.
Use toothpicks and pin several places to keep the bacon on the dates.
Place bacon wrapped dates in a oven (toaster ) and bake at 350 degree until bacon is golden brown (about 15 to 20 min).
Remove from the oven and remove the toothpicks. Place them on a paper towel to remove excessive grease.
