Crispy Pan Fried Salmon with Tartar Sauce

I love “fish and chips,” but here in Hawaii it’s not so easy to find the dish. This is my version of fish and chips using salmon.

Crispy Pan-fried Salmon

Make tartare sauce in advance.

Ingredients

  • 1 1/2 lbs salmon (sliced)

  • 1 TBS flour

  • 1 egg well beaten

  • 1 cup Panko (Japanese bread crumbs)

  • 1 cup vegetable oil (to fry)

  • lemon wedges

  • salt pepper

Directions

  • Slice salmon (raw) about 2 inch thick and 3 inch long. Salt pepper generously.
  • Put flour and cover well. In a flat plate, crack an egg and beat well. Put egg wash on floured salmon sticks.
  • Put panko on salmon and let them sit in the fridge until you are ready to fry.
  • Prepare a slightly deep frying pan, add oil and heat med-high. Fry salmon sticks until golden brown.
  • Add lemon wedges or (if you have) tartare sauce and enjoy.

Notes

  • If parsley flakes are available, you can add in Panko.
