Not very well known in US, but lotus roots are tasty with crunchy and can be a great side dish. This teriyaki butter lotus root is fun to eat and delicious.

1 small Lotus root (1/4 pound or 150 g)
1 tsp vinegar (dilute in 1 cup water)
1 tsp oil
1 TBS soy sauce
1 TBS Mirin
1 tsp Butter
2 TBS Mayonnaise
1/2 tsp Wasabi (Japanese green horse radish) tube
