Bruschetta - Italian Tomato Toast

Super quick and never fail appetizer!

Crusty Italian bread was toasted in the pizza oven and fresh tomato with olive oil was added on top. Probably you don’t have a pizza oven, so let’s use a toaster.

We lived in Naples, Italy back in late 1980’s and this was one of our favorites.

Cooking Tips:

  1. Use fresh ripe tomatoes and can be cherry tomatoes.
  2. After dicing, make sure to squeeze the juice out.
  3. Use Good extra virgin olive oil and balsamic vinegar.
  4. Put the tomato mixture when you serve.
  5. It’s an extra work but tastier if you brush the bread with olive oil and garlic when toasting.
  6. To upgrade, add fresh mozzarella cheese, burrata or prosciutto ham.

Ingredients

  • 4 slices French or Italian bread

  • 1 medium Ripe Tomato

  • 2 TBS Extra Virgin Olive oil

  • 1 tsp Balsamic vinegar

  • 1 tsp Fresh Basil leaves chopped

  • Salt and Pepper

  • Garlic (optional)

Directions

  • Slice bread, baste with some olive oil and toast.
  • Dice the tomato, squeeze some of the juice and put them in a small bowl.
  • In the tomato bowl, add salt, pepper, vinegar, and oil. Mix well
  • Chop basil leaves (and garlic if you like) and add to the tomato mix.
  • Put the tomato mix on the bread and serve.

Notes

  • Use ripe tomatoes or cherry tomatoes. French baguette is the preferred bread.
