Creamy Mashed Potatoes

American popular side dish that everyone likes. This recipe is creamy adding whole cream, egg yolk and cream cheese.  Make a lot and you can enjoy potato pancake the next morning.

Cooking tips: Use hand blender to mash potatoes.

Creamy Mashed Potatoes

Ingredients

  • 2 med size potatoes (200 g each)

  • 1/2 cup whipping cream

  • 1 TBS Butter

  • 2 TBS cream cheese (Mascarpone cheese)

  • 2 Egg yolks or 1 egg

  • salt pepper

Directions

  • Clean and peel potatoes. Dice into about 2 inch pieces, and boil until soft.
  • Drain well, put back in the pot and cook until the potatoes get fluffy.
  • Remove from the heat. In the pot, mash the potatoes well. (hand blender can be used)
  • Add butter, cream, cream cheese and egg yolk. Salt pepper to taste.

Notes

  • Mascarpone cheese is Italian cream cheese and it is delicious.
