Ingredients

  • 1/2 lbs stew beef

  • 1 carrot

  • 1/2 onion

  • 1 potato

  • 1 cup Beef stock

  • 1/2 cup Red wine

  • 1 TBS tomato paste

  • bay leaf, thyme, salt and pepper

  • olive oil

  • flour

  • butter

Directions

  • Cut stew beef in 1 inch squares. Salt and pepper generously. Sprinkle flour.
  • Heat a large heavy pot and add oil. Brown beef all sides. Remove it and set aside.
  • In the same pan, add more oil, add onion, garlic, and carrots and cook about 5 min. Add the beef.
  • Add red wine, beef stock, tomato paste and herbs. When it boils, simmer until the beef get tender. It takes about 2 hours.
  • Put potato after cooking 1 hour.
  • In a small bowl, combine room temperature butter and flour. Use this mix to thicken the stew if the stew is too runny. Salt and pepper to taste.

Notes

  • This is a stove top recipe, but you can put it in the oven and cook too.
