Antipasto Stacks with MacNuts Paste

This dish is beautiful and vegetarian appetizer. Instead of ricotta cheese or any soft cheese, macadamia nuts paste is used.

Prepare vegetable antipasti in advance for this dish.

Ingredients

  • Some Vegetable antipasti (egg plants, red pepper, zucchini)

  • 1/2 cup Roasted unsalted macadamia nuts

  • 1 TBS water

  • 1 tsp lemon juice

  • olive oil and balsamic vinegar glaze

  • basil for garnish

Directions

  • Prepare vegetable antipasti in advance. Keep them in the fridge.
  • In a food processor, add macadamia nuts and puree. Add water slowly and lemon juice. Mix. This is Macnut paste.
  • Build a stack by placing zucchini and Macnut paste.
    Garnish with egg plants and red pepper.
  • Put olive oil and balsamic glaze and garnish with basil.
