Crusty Italian bread was toasted in the pizza oven and fresh tomato with olive oil was added on top. Probably you don’t have a pizza oven, so let’s use a toaster.
We lived in Naples, Italy back in late 1980’s and this was one of our favorites.
Cooking Tips:
Use fresh ripe tomatoes and can be cherry tomatoes.
After dicing, make sure to squeeze the juice out.
Use Good extra virgin olive oil and balsamic vinegar.
Put the tomato mixture when you serve.
It’s an extra work but tastier if you brush the bread with olive oil and garlic when toasting.
To upgrade, add fresh mozzarella cheese, burrata or prosciutto ham.
