When I ate spaghetti ala pomodoro (tomato spaghetti) in Naples, I was truly amazed by that taste. “What? What did I eat just now? Is this spaghetti?
The combination of right amount of salt, oil, tomato and pasta is exquisite.
Since then, I tried many kinds of pasta, Bucatini ala Amatriciana is one of my favorites and it originated from Rome.
We ate this dish at a famous historic restaurant. The interior was nice traditional decor and the waiters were quite old, but professionals.
Amatriciana is a sauce with bacon-like meat called “guanciale”, onion, and tomato sauce. The pasta is long, thick spaghetti with hole in the middle like a straw.
It can be pretty messy, so I don’t recommend wearing a nice white shirt or dress for this dish.
If you can’t find a pasta called bucatini, you can substitute it with thick spaghetti.

Bucatini ala Amatriciana

This recipe uses "basic tomato sauce."
Ingredients
1cupBasic tomato sauce
1/4cuppancetta (guanchiale) or bacon
1/4smallonion (diced)
1clovegarlic (diced) option
2TBSolive oil
1/4packageBucatini pasta
Salt Pepper
somePecorino (parmesan) cheese
Directions
Start cooking the pasta. Remove from the heat about 2 mins before the "instructed cooking time" because we need to cook a little more in the pan with the sauce.
In a small frying pan, cook pancetta until done (or bacon if it is not available). Set aside with grease.
Heat a medium sized pan over medium heat and cook diced onion and garlic until tender.
When onion is ready, add pancetta (bacon) and tomato sauce and cook a few minutes.
When pasta is ready, drain the water, but keep some cooked water (about 1/2 cup).
Put the pasta in the sauce mix and start mixing adding a little water. Cook about 1 min or so until the pasta is well coated with the sauce.
Plate and put shaved cheese over the top.
Notes
Probably it is hard to find "guancila." In that case try to find "pancetta." If that is not available use bacon which is mild taste.
