Ingredients
2med sizepotatoes (200 g each)
1/2cupwhipping cream
1TBSButter
2TBScream cheese (Mascarpone cheese)
2Egg yolks or 1 egg
salt pepper
Directions
Clean and peel potatoes. Dice into about 2 inch pieces, and boil until soft.
Drain well, put back in the pot and cook until the potatoes get fluffy.
Remove from the heat. In the pot, mash the potatoes well. (hand blender can be used)
Add butter, cream, cream cheese and egg yolk. Salt pepper to taste.
Notes
Mascarpone cheese is Italian cream cheese and it is delicious.
