One of the big annual events in US is Thanksgiving. Christmas and Thanksgiving are important family days and holidays. People travel back home to see families to spend time. There is a Thanksgiving travel rush and flights get expensive and roads are crowded.
On Thanksgiving afternoon or evening, the whole family eats turkey and plenty of other traditional dishes. Sometimes they invite neighbors or friends. They start the party earlier in the day and last until they eat Turkey dinner and beyond.
Turkeys are huge birds. I think it is a tradition unique to the US. Large ones weigh more than 20 pounds. You start cooking from the morning and it takes over 5 hours to cook. Since it is frozen, it takes 2 days to defrost. It’s quite an effort. You have to have an American sized fridge and oven to deal with turkey.
When our children were small, we often invited friends and neighbors and cooked a big turkey, but since the kids are gone, we don’t need a huge one. We don’t want to eat leftovers for days.
So for a smaller family try this recipe. I used Cornish game hens. If they are not available, substitute with a roasting chicken. It will be still delicious. Happy Thanksgiving.
If you would like to stuff the hen, put some salt pepper in the cavity of the hen and put stuffing inside. Close the cavity with toothpicks and strings (as shown below). Generously salt pepper the hens.
You can roast as is but if you want to add vegetables, dice vegetables and place them under the hens in the oven safe container.
Pour some olive oil and bake in the oven until golden brown (about 40 to 50 min).
When cooled a little remove the string and toothpicks.
