  • 8 - 10 Mushrooms

  • 1-2 slices Ham

  • 2 TBS Cream cheese

  • 1 TBS Onion

  • 1 tsp Panko (bread crumbs)

  • Salt pepper

  • 1-2 TBS Shredded cheddar cheese

  • Green onion or parsley

Directions

  • Preheat the oven to 350 degree. (If you are using a small toaster oven, cook longer.)
  • Clean mushrooms, remove the stems and keep them.
  • Dice the stems, ham and onion. Cook in a oiled flying pan until tender.
  • Add cream cheese and cook until cheese is melted. Add Panko and salt/pepper. Remove from the heat.
  • In a Pyrex dish (oven safe dish), place mushrooms upside down. Using a small spoon, put the cheese mixture in the stem hole.
  • Sprinkle shredded cheese on top of the mushrooms and bake in the oven about 15 min until the top is golden and mushrooms are tender. Garnish with parsley.

Notes

  • Use medium to large size mushrooms. Ham can be substituted with sausage or bacon. Cheddar cheese can be Parmesan cheese or any other shredded cheese.
