Teri-Butter Lotus Root

Not very well known in US, but lotus roots are tasty with crunchy and can be a great side dish. This teriyaki butter lotus root is fun to eat and delicious.

Ingredients

  • 1 small Lotus root (1/4 pound or 150 g)

  • 1 tsp vinegar (dilute in 1 cup water)

  • 1 tsp oil

  • 1 TBS soy sauce

  • 1 TBS Mirin

  • 1 tsp Butter

  • 2 TBS Mayonnaise

  • 1/2 tsp Wasabi (Japanese green horse radish) tube

Directions

  • Peel the lotus root skin with a peeler. Cut in 1/2 inch and soak in vinegared water for a few minutes. Pat dry.
  • Heat a frying pan over med heat and put oil. Sauté both sides of lotus root until golden brown.
  • Add soy sauce, Mirin and butter and cook a few minutes.
  • Make wasabi mayonnaise sauce (mix mayo and wasabi well).
