The first time I saw Vietnamese sandwich, I thought it was quite odd. For me sandwich was some kind of meat (ham, roast beef) and cheese. This one was with Tofu and Daikon pickles.
Prepare vegetable pickles in advance. See below for the recipe.
Ingredients

1tspHoney
1/2tspFish sauce
1pieceDeep fried tofu (sliced)
3-4leaveslettuce
someThai basil (or basil) cilantro leaves mint leaves
someOnion or green onion (diced)
lime (option)
2TBSMayonnaise and Siracha sauce mix
someYellow Japanese radish pickles and carrot pickles (see the recipe below)
2Mini French Bread
Directions
Pork sandwich - Sauté pork slices over med heat and add onion, honey and fish sauce. Put aside.
Deep fried Tofu sandwich - slice deep flied tofu and sauté over med heat. Set aside.
Cut mini baguet in half. (toast if you like)
Put either pork or fried tofu, lettuce, vegetable pickles, and sauce (mayo and siracha)
Notes
Carrot pickles: Slice 1 small carrot and marinate in honey (1TBS) and apple cider vinegar (1/4 cup) for one day. Refrigerate. Purchase Japanese yellow radish pickle in Japanese food store. Slice about the same size as carrots.
