Zucchini Pasta

My daughter and son are fitness nuts and have special diets. My daughter ‘s diet is almost KETO. My son’s diet is now close to PALEO. Before, both of them were vegetarian. 

At that time, whenever they came home, I would try to make vegetarian dishes to match their diet.  Among those dishes, I thought this zucchini spaghetti was a pretty tasty one, and I still make it sometimes.

To make a vegetable spaghetti (noodle), you need a vegetable slicer called  Spiriser or Vegetti. They are not expensive and can be purchased on Amazon or at a specialty store.

Great recipe if you are vegetarian or not. Give it a try.

Ingredients

  • 1 large zucchini (2 small ones)

  • 1 TBS Olive oil

  • 1 clove garlic (sliced or minced)

  • Salt pepper

Directions

  • Using "vegetable pasta slicer" make zucchini pasta.
  • Heat a mid size frying pan, and put oil and garlic. Cook until tender.
  • Add zucchini pasta and cook until tender. Salt pepper.
  • Add your favorite sauce (tomato sauce etc.) and enjoy.

  • You can purchase "vegetable pasta slicer" @ Amazon or any kitchen stores.
